Put the cranberry juice, orange juice, honey, ginger slices, cinnamon stick, cloves, and allspice in a pot and bring to a boil.
Turn off the heat and let the mixture steep until it is room temperature.
Strain the spices out with a fine mesh sieve and store the cranberry syrup in a jar in the refrigerator until ready to use.
Cranberry Champagne Cocktail (per cocktail)
Put ¼ cup of the spiced cranberry syrup into a glass.
Add desired amount of champagne to the glass.
Garnish with whole cranberries and a sprig of fresh rosemary.
Notes
The spiced cranberry syrup can be sweetened to your liking, feel free to add more honey for a sweeter cocktail.
Champagne, Prosecco, or any sparkling white wine will work. If you don’t want to open a whole bottle of champagne check your local store for cans of Prosecco or sparkling wine.
Use sparkling water and/or ginger ale instead of champagne for a non-alcoholic mocktail. I prefer a mix of the two, but do what suits you and your guests!
