When lilacs are in bloom, preserve their delicate flavor in a batch of low sugar lilac jelly

Gather fresh lilac flowers

Fill a large jar with lilac flower blossoms

Pour boiling water over them to make a tea infusion

Cool at room temp & steep overnight in the fridge.

Strain tea into a saucepan before adding calcium water & lemon juice. Boil before adding sugar & pectin.

Once back up to a boil, turn off heat & fill the hot jars with the jelly.

Process in a water bath canner or store refrigerated for 3 weeks.
